Breakfast Sliders with Martin’s Potato Rolls

I’ve been back to work for a full month now following a two month maternity leave and I’m finally starting to feel like I belong again.  I’ve caught up on hundreds of emails, gotten up to speed on where assignments stand, taken on a few additional tasks and I’m starting to form a work day routine.  Here are the usual highlights of the first twelve hours of my day:

  • 5:30am – Wake and engage in social media while nursing Morgan. 
  • 6:00am – Get dressed.
  • 6:25am – Get Maddie up and dressed.
  • 6:50am – Prepare a hearty breakfast such as breakfast sliders using Martin’s Potato Rolls.
  • 7:15am – Head to Maddie’s Daycare.
  • 7:30am – Head to work.
  • 8:30am – Arrive at work.
  • 9:15am – Pump!
  • 11:30am – Attempt to choose a healthy lunch to rid myself of the baby weight.
  • 1:15pm – Pump!
  • 5:00pm – Pick up Maddie.
  • 5:15pm – Pick up Morgan.
You know what I’ve come to realize? If I don’t eat a good, solid breakfast in the morning then my energy level from that point forward is wrecked.  It’s also important that I make breakfast for Madison’s sake.  She gets what they consider a morning snack at school so the expectation is that she eat breakfast prior to being dropped off.  For those reasons, I’m committed to whipping something up every morning during the work week and I’ve found that a quick variation of bacon, eggs and cheese paired with Martin’s Potato Rolls is an easy choice.  
Most days eggs and cheese on a buttered potato roll is the go-to choice because it’s the quickest to prepare.  But, on days when everything is going exceptionally well in the morning I’ll prepare bacon or sausage and saute a few onions to top off my breakfast slider.
I usually tend to grab the dinner potato rolls because they’re so versatile and can be used to make sandwiches, be eaten along with dinner or simply eaten plain because they’re just that good.  My husband, Mario, and Madison love how soft they are and I love that they’re free of high fructose corn syrup, artificial dyes, and trans fat, and contains protein (something a picky toddler can’t get enough of).

Breakfast sliders are pretty simple to make; taking no more than 20 minutes to prep.

Ingredients (grab ingredients based on your family size)

Eggs
Bacon
Cheese, slices
Onions, sliced rings
2 Tsp Butter
2 Tsp Olive Oil
Salt, pepper and condiments, to taste

Instructions
If time allows, bake bacon on a cookie sheet covered with foil for 20 minutes (400 degrees).

In a pan over medium heat, melt 1 tsp of butter.
Place sliced potato rolls into the pan, cooking until slightly toasted then set aside.
In a separate pan, heat olive oil and saute onions for 5 minutes then set aside.
Melt 1 tsp of butter in the same pan used to toast the rolls and prepare the eggs to your liking.
Place cooked bacon on a paper towel to remove any excess grease.
Allow your family to build their own sandwiches and enjoy!

With school in full swing and work to get to, we aren’t able to sit down to eat together as a family for breakfast during the work week.  So, these sandwiches are great when we’re on-the-go in the mornings and I love how the rolls fit perfectly into Madison’s cute little hands.       Hi Chloe! Did you make them for your husband? If so, what did he think? Did you know that there is 6 grams of protein in an egg and 7 grams of protein in one of Martin's Sandwich Potato Rolls? That's 13 grams of protein, plus whatever meat & cheese you add to it. I'm just mentioning that because most guys like to make sure they're eating protein to support their muscles. 🙂

    this one looks yummy.. I am also a working mom and I know how hard it is.. well I have 4 kids.. youngest is 6 months old.. and its feels like I am always running out of time.. I need to try this..
