Healthy Blue Berry Muffins

Please listen when your elders tell you that your metabolism slows down in your thirties.  I remember my aunt and uncle mentioning this to me when I was in college, eating up any and everything I wanted and maintaining my weight with little to no effort.  Now, 34, married, and two kids later, I totally get what they were talking about. Stress eating has been the biggest culprit for my weight gain as of late and I’ve recognized that I have no discipline when it comes to sticking to a workout routine and eating balanced meals so I’ve told myself to pick one thing to focus on and master at a time versus trying to do all the things to try to lose weight.  They say abs are made in the kitchen so that’s my focus right now, and not so much working out, although I really need to keep my body moving too…but baby steps.

So, for breakfast, I’ve been reaching for healthier options that are still yummy and delicious like these healthy Greek yogurt blueberry muffins.  For lunch during the week, I opt for Herbalife shakes, and for dinner, I lean towards lean meats and veggies.  But carbs are still my weakness.  I’m also still having my way with food during the weekend, but I’ll be working to reign that in and only have one cheat day per week then eventually one cheat meal per week.  Again, baby steps.   Next week I’m going to try to shoot for no carbs and I could cry right now just thinking about it.   But until then, I’ll be munching on these Greek yogurt blueberry muffins made with whole wheat flour.  They’re totally healthy.  Totally.

Healthy Greek Yogurt Blueberry Muffins

Ingredients

1/4 Cup butter
1 Tbsp lemon juice
1 Tsp vanilla extract
1 1/2 Cup Greek yogurt
2 Eggs + 1 yolk
1 1/2 Cups blueberries
3/4 Cups brown sugar
1 1/2 Cups whole wheat flour
1 Cup flour
2 Tsp baking powder

Directions:

Preheat oven to 350 degrees. Grease a muffin oven tin and set aside.
In a bowl mix the butter with the vanilla and the lemon juice. Add the brown sugar.
One by one add the eggs and egg yolk beating after each addition.
Add the flour and mix until incorporated. Add the Greek yogurt and finish with the whole wheat flour and baking powder.
With the help of a rubber spatula mix in the blueberries. Divide the batter between the muffin cups. Take to the oven and bake for 20 minutes or until done.
