Small Batch Peanut Butter Brownies

Christmas is right around the corner, and traditionally we bake cookies with the kids each year on Christmas Eve.  We don’t necessarily do this for Santa since we don’t really teach about Saint Nick.  We do it more so for fun and because the girls are still young enough to know of Santa and the whole cookie, chimney, presents thing thanks to their friends, school, etc.  So, we bake with them and just have some fun with it.  
Since the hubs and I are the ones eating these cookies every year, I figured it wouldn’t hurt to try something a little different; to make a sweet treat that’s just as good, and the perfect portion size for just us two.  A small batch of brownies! *squeals* 
If you’re looking to make yourself Santa something different this year,too, then I suggest you give these a try.

Ingredients: 
6 Tbsp cocoa powder
1/4 Cup sugar
1/4 Cup brown sugar
4 Tbsp butter
1/4 Cup flour
1 Egg
1/2 Tsp baking powder
1/2 Tsp vanilla extract
2 Tbsp peanut butter + More for swirls

Directions: Preheat your oven to 350 degrees. Grease and flour a baking pan (a 4×8 inch loaf pan will work great) and set aside. 


Meanwhile, cream the butter and the peanut butter. Add the vanilla and both sugars and mix until incorporated. Mix in the egg and with the help of a spatula incorporate it. In another bowl combine the flour, cocoa powder and baking powder then add to the wet ingredients.  Pour the batter into the prepared pan, swirl in some peanut butter.  Place in the oven and bake for 20 minutes.
