Chicken Alfredo w/ Broccoli

I made Chicken Alfredo w/ Broccoli last week using the Olive Garden Alfredo Sauce recipe.  I always thought cooking things from scratch was hard and time consuming.  But I’m starting to cook more and more from scratch and the more I do it the more I realize that it isn’t that bad.  Some things do take time but it has proven to be well worth the effort.  I can’t wait to get to the point where I’m making home made loaves of bread and my own pasta even, ambitious, I know!


Ingredients: 1 1/2 cup milk, 1 1/2 cup heavy cream, 1/2 cup imported Parmesan cheese – grated, 
1/2 cup imported Romano cheese – grated, 6 egg yolks from fresh jumbo eggs, salt and black pepper to taste


What I did (i.e. my directions)




I seasoned 1lb of chicken according to my preference in a meatloaf pan (notice the holes on the bottom). There is an identical pan (no holes) underneath filled with water to keep the chicken moist during baking.  The chicken baked for ~45 minutes while I prepared the Alfredo Sauce, Pasta (Fettuccine – cooked according to package directions) and Broccoli (boiled).

Milk and cream was heated until it began to simmer.  Then the heat was turned off and the cheeses were added.  I then seasoned with salt and pepper and removed from heat.

Egg yolks were placed into a separate bowl and a portion of the hot milk and cream mixture was mixed in.

The mixture was then slowly added back into the remaining cream mixture, placed back on very low heat and continually stirred until simmering. The sauce was then removed from heat to thicken.

I then added the cooked pasta…

Cooked Broccoli…

…and finally the baked chicken (cut into pieces) for a complete one pot dish!

I think I may play around with what kind of cheeses I use / add next time but I absolutely loved this dish and the little one couldn’t get enough as well!

      Mine as well, I get it every time I go to Olive Garden and I actually get them to add broccoli (or mushrooms)…yummy!!!
