Cheesy Turkey Chili

 
It’s finally soup/chili season here in the south and I recently whipped up some delicious potato soup.  Sadly (although it’s a good thing), my husband has decided that he isn’t eating pork anymore.  He’s trying to convince me to do the same so that it can be another item that we eliminate from our home.  But I’m just not ready to give it up yet.  I whipped up the potato soup, with bacon being one of the main ingredients, and hoped that he’d eventually give in and eat some so that I wouldn’t have to eat it all by myself.  He didn’t budge, in case you’re wondering.
So on to chili, since I don’t have to worry about pork *rolls eyes*.  One of my friends makes the best chili I’ve ever tasted and she does it using ground turkey.  I’m still a huge fan of beef, but it’s another one of those things that we need to slowly get away from eating so much.  The chili below is hearty and healthy and so very yummy.  It’s packed with beans, quinoa and ground turkey, and can definitely be flavored to your liking.
Before the winter is out, give this chili a try.  I hope you enjoy it!

Ingredients
2 Cups black beans
1 Cup quinoa
5 Cups water
½ Cup tomato paste
1 Onion chopped
1 lb lean ground turkey
Salt and pepper to taste
1 Lime
1 Cup grated white cheese

Directions
Soak beans in water overnight.
Add 3 cups of water to a large pot and cook beans until soft.
In a medium saucepan saute the onions and brown the turkey.
In a separate pot add 1 cup of quinoa to 2 cups of water and boil.
Add the tomato sauce to the beans when water cooks down.
Follow with the onions and turkey, then salt and pepper to taste.
Add in the quinoa when beans are done and water is almost completely evaporated.
Add in the grated white cheese.
Stir until well blended.
Squeeze in the juice of 1 lime.
Put chili in the bowls and garnish with grated white cheese.

Serve and enjoy.

Tips
Add 1 ½ tbsps of paprika for a more peppery taste.

    This looks so delicious! I've been looking for a new turkey chili recipe! I love how their quinoa in this recipe as well. I can just imagine how nice a big bowl of this would feel on a cold day!
