Tri-Color Rotini w/ Mushroom Cream Sauce

If you follow me on Instagram (@pharr_away) then you probably saw my post about my meatless dinner during week three of my 21 Day Fast.
I can not lie, the fast was incredibly difficult and I even caved into my cravings one day thanks to a bit of peer pressure from my friends while out of town for the weekend.  But that is truly no excuse.  But I digress!
For about three days straight during the meatless week I ate the following and didn’t mind doing so at all:
Tri-Color Rotini w/ Mushroom Cream Sauce
Prep Time: 10 min | Cook Time:  15 minutes

Ingredients
Olive Oil
2 chopped onions
2 cloves of garlic
1 cup of mushrooms (chopped)
1 box of Tri-color Rotini pasta (cooked)
1/2 cup chicken stock
1 1/2 cup Heavy Cream
1/2 tsp of dried basil
1/2 tsp of dried parsley
Salt & Pepper (to taste)

Instructions

  • Cook box of rotini.  Remember to add salt to the water and boil until al dente.
  • On medium heat saute mushrooms, onion and garlic in 2 tablespoons olive oil until the mushroom starts to golden and the onion is soft.
  • Add chicken stock, cream, basil and parsley.
  • Let it simmer for 5 minutes and season with salt and pepper.
  • Strain and place in a bowl. Add the sauce, mix and serve with shaved parmesan on top.
Note:  This makes a lot of pasta, so if you’re not making this for a family I suggest that you cut the recipe in half.

    That looks yummy! And family peer pressure is the worst! I'm always doing fairly well on a diet until my family shows up and wants to go to Golden Corral…
