Peanut Butter Granola Bars

I love snacks!
I’m sure you’re not surprised considering my addiction to sugar.  But these peanut butter granola bars consist of wholesome ingredients like unsalted almonds, oats, coconut oil, etc. so I don’t feel as bad when I grab one, or two :), for my midday snack!
I also love the simplicity of this “no-bake” recipe! Oh…and they are absolutely delicious too, especially considering the fact that I didn’t like granola bars until I made these.  That should tell you something!!!
Simple yet delicious, "no-bake" granola bars.

Prep Time: 10 min | Chill Time: 2 hours – overnight

Ingredients
1 cup 100% peanut butter
2/3 cup honey
1/2 cup coconut oil
2 cups oats
1 cup unsalted sunflower seeds
1 cup unsalted sliced almonds
{or 2 cups of your own combination of nuts and/or dried fruit}
Chocolate chips – to sprinkle on top

Instructions
  • Over low-medium heat, melt together peanut butter, honey and coconut oil.
  • Remove from heat and add oats, seeds, and almonds. Stir well.
  • Press mixture into an 8-inch square baking dish and sprinkle with chocolate chips (while still warm), slightly pressing them into the mixture.
  • Chill for 2 hours (or overnight) in fridge and cut into bars.

  • The peanut butter has a tendency to melt so keep refrigerated.
  • The batch I made yielded 12 bars; however, you can cut them as big or small as you prefer.

    Oh my word. Everyone in blogland needs to slow their roll with all this chewy peanut butter chocolatey goodness. I can't handle all of it at once.

      Yes! I've been saying way too many delicious desserts to try that are going to get me in trouble! It's too close to summer for that :)!!!
