Conquering Breakfast with a Picky Eater


My oldest daughter is four and will be five in February.  She's at an age now where she really has an opinion about what she eats.  She's always been picky, but now she is really able to articulate how she feels about a meal and will let me know what she likes or doesn't like, and what she thinks we should have for any given meal.

I tend to plan out what we're having for dinner and try my best to cook dinner once per week by doing the bulk of the cooking during the weekend so I don't tend to ask for a lot of feedback in that arena.  But breakfast is one of those meals that I make each morning so I always let her decide what she wants.  Each morning while I'm getting her dressed we talk about what she'd like for breakfast.

Almost all mornings consists of one pick from the categories below, unless I'm having a rushed morning where cereal is the only option (and y'all know we don't like to buy cereal):

  • Grains - Waffles, pancakes, muffins or toast
  • Proteins - Eggs, cheese stick or beef smoked sausage
  • Fruit - Apples, oranges, strawberries or bananas
  • Drink - Milk or Apple/Orange Juice

By sticking to the options above every single day we've developed a routine that she knows and expects.  There is no fight or fuss about what to eat during breakfast time and she has no problem eating everything on her plate.  I'm planning to introduce oatmeal as an option soon, but I'll do so slowly and delicately at first -- offering it as something on my plate that she can just taste here and there so that I can get a feel for how she likes it.  Once I'm confident that it's a go then we'll add it to the rotation.

Now, if only I can figure out how to get her to eat what I cook for dinner consistently then I'd truly be winning in the parenting department.  But we'll get there...eventually....I think.  For now, I've definitely conquered breakfast with a picky eater and I've got a great s'mores waffle recipe that goes over well with picky eaters like my girl.  Check it out below and let me know what your family thinks.

S'Mores Waffles

Ingredients
3 Cups flour
2 Cups milk
½ Cup sugar
½ Cup vegetable oil
2 Tsps baking soda
½ Tbsp vanilla extract
Pinch of salt
2 Egg whites
1 Cup chocolate chips
1 Cup marshmallows
Whipped cream to taste

Directions
Preheat waffle iron to medium heat.
Whisk together the flour, milk, sugar, vegetable oil, baking soda, vanilla, eggs, and salt.
Add ½ cup of chocolate chips into the batter and stir well.
Pour the batter into the waffle maker.
Cook for 8 minutes.
Top with the remaining chocolate chips and marshmallows.
Garnish with whipped cream.

Serve and enjoy!

Tips
The batter can be frozen into zip bags for up to 1 month.
