Baked Potato Casserole

This month I’m making a conscientious effort to spice up our side dishes!

It’s so easy to focus on the main dish of our meal then throw a side or two together without much thought.  In all actuality our sides should really be thought of as the main dish, full of fresh, wholesome vegetables that take up the majority of the plate.

With that said, here’s a quick casserole that came together with very little effort, and it tastes as good as it looks!

Prep Time: 25 minutes
Adapted from {Hott Mama in the City}


Ingredients 
6 – Potatoes
1/4 Cup – Unsalted Sweet Butter
1/2 Cup – Shredded Cheese
3 Strips – Bacon, Cooked (Crispy)
Chives (Dried)
Salt & Pepper
Instructions

  • Peel and cube potatoes, and cook until tender (~20 min.).
  • Cook bacon until crispy and set aside on paper towel.
  • Drain potatoes and add to a casserole dish.
  • Pour melted butter over the potatoes and season with salt and pepper.
  • Top with shredded cheese, crumble bacon then add chives.
  • Bake in the oven at 375 degrees Fahrenheit for 5 minutes or until cheese is melted. 
And I could eat this every week…

    You make a very good point about side dishes. I find myself doing the same. Throwing something quick together last minute or skipping the side dish altogether. Yikes! These potatoes look delicious! Thanks for sharing! I don't have a fav side dish link to share with you but will say a simple lettuce salad with quick toppings of chees and tomato usually does the trick for us!

      Use your favorite cheese! Cheddar would work well, but I used mozzarella because that is what I have in my fridge.

    Great recipe, I also sprinkled dry ranch dressing on the top of the potatoes before I put in the oven. Super quick and easy!

    I liked this recipe. I love potatoes and it was nice to find something that was not drowning in cream of something condensed soup and sour cream. I like those too but this recipe you can prepare much more often.
