Cheesecake Topped w/ Strawberries

Let me just preface this with the fact that I think strawberries are disgusting. So this is a cheesecake that I make for my family and friends, especially my husband, without even tasting!
People go CRAZY over this thing. I often consider selling them, because it’s just that good folks, but I honestly don’t have the patience to mass produce sweets. So here goes the recipe, my friends.

Cheesecake and strawberries
Prep Time: 20 min | Cook Time: 50-60 min | Cool Time: 4-5 hrs


Ingredients
2 Pkgs. (8oz each) Philadelphia Cream Cheese (softened)
4 Tbs Unsalted Butter (browned)

1 Cup of Granulated Sugar

2 Eggs
1 Tsp Vanilla Extract
Keebler Ready Crust Graham, 2 Extra Servings, Pie Crust
(it just makes my life easier)

Instructions
  • Preheat oven to 325 degrees F.
  • Blend together the cream cheese and the sugar (adding the sugar gradually) until well blended.
  • Add the vanilla extract and blend.
  • Add eggs individually and mix together slowly after each addition.
  • Melt the butter on the stove top until it’s just turns brown (be careful not to burn).
  • Add butter and blend.
  • Pour cream cheese mixture into ready made pie crust.
  • Bake for 50 minutes or until the center is almost set. 
  • Place the entire pie pan onto a cooling rack and let cool for at least 30 minutes. 
  • Refrigerate for at least 4 hours before serving.
Notes:
  • Place the cheesecake onto a larger pan (I use a cookie sheet) and add water to the pan to create a water bath, this helps prevent/reduce surface cracks on the cheesecake for a prettier look (but it’s not absolutely necessary since you’re going to top it with strawberries.
  • You can simply add melted butter without browning it if you prefer. Sometimes I brown it, sometimes I don’t it just depends on how I’m feeling that day. Browning the butter gives the pie a deep nutty flavor that I enjoy.  But it’s totally delicious either way.
  • To layer the strawberries: Cut off the stem and cut them lengthwise. Start from the outside of the cheesecake and layer them side by side working your way in until you get to the center. Add a bit of the stem in the very center for garnish/color.

    I think it's super weird that you don't like strawberries!! This cheesecake looks delectable!! I can't remember if I've tried this before or not…but my thing with cheesecake is I end up eating more of the fruit than the cake!!

      Yeah, everyone thinks it's quite odd…I'm like the only one on the planet who doesn't eat strawberries without having an allergy. This cheesecake is very good though (without them) but I'm sure you'd like this one since you're a strawberry fan!!!
