Simply Granola

So, yeah, I made granola the other day.  Apparently, I have some kind of oat obsession going on right now.  I didn’t even eat oats, granola, or granola bars for that matter, until just recently.  Lately, I’ve been putting oats in EVERYTHING, including cookies 🙂 um, yum!!!

Making homemade granola is simple and delicious!

Homemade granola is actually pretty simple to make.  I whipped this stuff up in a jiffy on a whim and I’ve been putting it in, and on, everything.  In my yogurt, on my pancakes, my cereal, ice cream…yeah, everything! It’s pretty darn good…

Prep Time: 5 min | Bake Time: 15 min 





Ingredients
1/4 cup honey
1/4 cup coconut oil
2 cups old-fashioned rolled oats
1/2 cup unsalted sunflower seeds
1/2 cup almonds (chopped)
1 tbs flax seeds
{or 1 cup of your own combination of nuts/seeds}
1/2 tsp cinnamon
1/2 tsp salt
1/4 tsp nutmeg

Instructions
  • Preheat oven to 325 degrees Fahrenheit.
  • Line a baking sheet with parchment paper.
  • Over low heat, melt together honey and coconut oil, then add the cinnamon, salt and nutmeg.
  • In a bowl mix together the oats, seeds, and almonds, then pour the honey/coconut mixture into the bowl.
  • Stir until all the oats, seeds and almonds are coated with the mixture.
  • Spread in a single layer on the prepared baking sheet and bake for 15 minutes or until golden brown (depending on your oven).
  • Allow to cool completely then store in an airtight container.
This recipe can easily be customized to include things you prefer, from adding dried fruit, to adding peanut butter, etc., its just a matter of what you have a taste for!

    This sounds and looks yummy! I remember someone telling me granola wasn't as healthy as they though because of it's ingredients. I didn't even know what it was made of, sounds pretty healthy to me, plus with this recipe you can use more or less of whichever ingredient. Thanks for sharing! Can you make me some :)!

      It really is! And I can see what people mean about it not being healthy, but like you mentioned when you're making it yourself you get to control how much you put into it. I may just be making some as gifts throughout the year…we'll see!!!

    I always add craisens to mine. the tart flavor gets me every time!! this looks great. 🙂

      Thanks, Elizabeth! I bet Madison would love it if I put craisens in it. I may have to add that to a half batch for her, thanks for the suggestion!
