Banana Muffins w/ Almonds

It should come as no surprise that I love muffins! There’s just something about their portability that gets me excited.  Plus, they fit into a child’s hands so perfectly.  It’s just cute, I tell you, cu-ute!!!  
Since Madison can’t have my blueberry muffins too often due to her eczema (too much blueberry causes her to have flare-ups) and Mario doesn’t like nuts, I’ve had to develop a muffin that we could all enjoy! So here’s to the banana muffin (some w/ almonds on top, some without)!!! 
Banana Muffins
By the way, these are my best muffins yet! So much better than my banana nut muffin recipe so I can tell I’m learning and growing when it comes to this whole “made from scratch” thing!

Oh yeah, they are moist and delicious too…obviously :)! So have at it…

Prep Time: 15 min | Cook Time: 15-20 min 



Ingredients
2 cups All-Purpose Flour

1 teaspoon Baking Powder
1 teaspoon Baking Soda
1/2 teaspoon Kosher Salt
1/2 teaspoon of cinnamon
1/4 teaspoon of nutmeg
3/4 cup Brown Sugar
1/2 cup Granulated Sugar
1/2 cup Unsalted Butter (softened)
1 Large Egg
1 teaspoon Vanilla Extract
3 Ripe Bananas
Almonds, as desired (for muffin tops), optional
Instructions

  • Preheat oven to 350 degrees F.
  • Peel and mash bananas and set aside.
  • Combine the first six ingredients (flour, baking powder, baking soda, salt, cinnamon and nutmeg) in a large bowl (incorporate completely).
  • In another bowl add softened butter and sugars and blend until smooth.
  • Add egg and blend.
  • Add vanilla extract and blend.
  • Add bananas to the bowl with sugar and use a spatula or spoon to combine. 
  • Add the banana mixture to the flour mixture and mix until just incorporated (do not over mix).
  • Divide batter between ~12 muffin cups.
  • Sprinkle almonds on top of each muffin, as desired (optional).
  • Bake Muffins for ~15 to 20 minutes until tops are no longer wet and a toothpick comes out clean.
  • Transfer muffins to a cooling rack and cool completely.

    UMMM.. These look amazing! I wish I was your neighbor haha! I'm def gonna have to make these for sure. I LOVE baking from scratch and all that. I somehow feel that it's healthier and tastier as well! 🙂

      Thanks, Heather! They were definitely a hit with everyone in the house. And you're right it's so much healthier and tastier without all of the extra ingredients and preservatives!
