Cheesy Cauliflower Casserole

Until last week I’ve never tried cauliflower.  It’s a shame, really.  But somehow, I always compared it to broccoli in my mind and just couldn’t get past the color.  Then something magical happened!  Okay, not really, I actually just saw a photo posted on Instagram by Samantha of some yummy looking macaroni and cheese! But as you should know by now it turned out to be cauliflower.

Naturally, I just had to give it a try and it’s definitely in the top 100 list of the best decisions I’ve ever made in my life! It’s just that serious folks!

A dish that looks and tastes like macaroni and cheese but made with cauliflower.


Prep Time: 20 min | Cook Time: 25-40 min

Ingredients

1 lb (1 head) cauliflower florets
4 oz shredded sharp cheddar cheese, divided, (extra to sprinkle on top, as desired)
4 oz NC Red Heifer Cheddar Cheese, divided (from my weekly Backyard Produce basket)!
4 oz cream cheese, softened
2 tablespoons heavy cream
1/2 small sweet onions, chopped
3 sliced bacon, cooked crispy and crumbled
1/4 tsp garlic powder
Salt & pepper to taste
Instructions
  • Preheat oven to 350 degrees.
  • Steam cauliflower florets until tender.
  • Over low-medium heat cream together the cheeses, cream cheese, and heavy cream. 
  • Stir in chopped onions, crumbled bacon, and garlic powder then set aside.
  • Drain any liquid from steamed cauliflower, add to cheese mixture and combine.
  • Mash with a potato masher.
  • Taste for seasoning, and add as necessary.
  • Pour into a 2-3 quart casserole dish and top with shredded sharp cheddar cheese.
  • Cover dish with foil and bake for 25 minutes
  • Remove foil and continue to bake until cheese is brown and bubbly!
Note(s)

  • 2-3 quart casserole dish is the perfect size for this recipe using the above measurements. 
  • The recipe can easily be doubled; however, the above will easily accommodate a family of four.

    Ha ha , I love the sneakiness! That's the only way I'll get a few of these people to eat it. I am funny about cauliflower too. It looks so good though. I'll give it a shot. Thanks Nicole!

      Exactly, Joi! I have my little lady eating grape tomatoes as a snack like their actually grapes! Whatever works to get her to eat her fruits and veggies!
