In the Kitchen: Broccoli & Cheese Soup!

I've been in love with Panera Bread's Broccoli and Cheese soup since for-EVER!!!  It's so delicious and filling.  So I searched and searched and found this recipe from Pinch of Yum, and this recipe from This Gal Cooks just fell into my email (ha)!  Lately, I've been getting a lot of my recipes from these two sites so you may want to check them out!

As for me, I do dabble in the kitchen a bit and couldn't decide between the two.  I really liked them both but there were things in one I thought would be good in the other and vice versa.  So, I took note of each and got this...




Ingredients 
2 - Large heads of Broccoli
1 26oz - Can of Cream of Chicken Soup
1/2 cup - Milk (2%) 
2 cans - Evaporated Milk
1 Large Onion, diced
1 cup - Baby Carrots, chopped
1 cup - Shredded Cheddar Cheese
Salt & Pepper (to taste)

    Prep / Cook Time:  10 min / 3.5hrs (high*)
    Chop broccoli, as desired
    Place soup, milk(s), onion, carrots & broccoli in slow cooker
    Cook on high for 3.5hrs (i.e. set it and forget it!)
    Puree or blend 2/3 of the mixture (return to pot, if removed)
    Stir in cheese
    Season w/ salt & pepper (top w/ cheese, if desired)
 
    *7hrs (low)  
Let me just say, this soup was some kind of amazing!  Mr. Pharr could not stop telling me how good it was (score)!!!  He didn't even offer up "just one little tip" as he so often does (as if he's really cooked anything for the past, I don't know, 7 years).  I was quite the happy camper myself :).  As for the babe, she devoured it!  I'm starting to think she'll eat anything though, but that's just a thought!

You should definitely give it, or one of the original recipes I mentioned, a try!  I'm proof that no matter how you mix it up, you can't go wrong!!!
